‘All-Sorts-of-Free’-Cookies

Who doesn’t love cookies? I’m always experimenting when it comes to baking. I finally got it right with these cookies. I added maple syrup, and it makes them just a bit sweeter.

Yields1 Serving

 1 cup almond flour
 ½ cup coconut flour
 ¼ cup coconut oil
 2 tsp baking soda
 1 cup coconut sugar
 ¼ cup maple syrup
 ¼ cup almond butter
 1 tbsp vanilla extract
 1 egg
 ½ package of dairy-free chocolate chips

Preheat oven to 350 degrees.

Mix dry ingredients in a large bowl.

Melt coconut oil for 30 seconds in the microwave.

Mix all wet ingredients in a small bowl and add to the larger bowl with the dry ingredients.

Fold in the chocolate chips.

Using a tablespoon, scoop the dough into balls. Flatten the balls into medium-sized patties. Place cookies 3-5 inches apart on a greased baking sheet. (I usually spray with coconut oil spray)

Bake for 12-14 minutes.
