Garlic Basil Chicken Bowls

Hopefully someone with a nutrition background reads this and comments. I know cornstarch is nothing more than a processed carb. That being said, one tablespoon makes all the difference. Chicken coated in cornstarch has this crispy, delicious layer.

Back to what you came here for- the recipe. This recipe is gluten-free and dairy-free. Minus the cornstarch and vegan mozzarella, it fits most diet plans. Scroll to the bottom for the recipe!

Yields2 Servings

 2 large chicken breasts
 1 tbsp cornstarch
 ½ cup avocado oil
 1 package of Trader Joe's carrot spirals
 1 package of fresh basil
 4 tbsp chopped garlic (separated)
 4 tbsp nutritional yeast
 vegan mozzarella cheese

Over low heat, place the frozen carrot spirals in a saucepan with 1/2 the garlic. Cover the saucepan.

Chop the chicken into 1 inch cubes and coat with the cornstarch. (I like to use a small Ziplock bag and shake until the chicken is coated)

Cook the chicken over high heat until it is no longer pink.

Using a food processor, blender, or Nutribullet, add basil, garlic, avocado oil and nutritional yeast. Process together until it is blended into a smooth sauce. (See pictures above).

Remove chicken and carrots from heat. Place chicken, sauce, and carrots in a large bowl and mix together.

Divide between two bowls. Garnish with basil and melted vegan mozzarella. Enjoy!
