Easy Dairy Free Pasta Salad

I’m embarrassed by my ‘food’tography skills lately. The only picture I took of the actual dish is abysmal, but I didn’t want to refrain from posting this delicious dish.

Easy Dairy Free Pasta Salad

You will need:

-1 box of pasta (Your choice! I used Sfoglini’s Beet Fusilli…it was $10. Needless to say we will be finding a more budget-friendly pasta to use next time)

-1/2 cup Tofutti’s Better Than Sour Cream

-1/4 cup dairy free parmesan cheese

-1/4 cup Dijon mustard

-1/4 cup sweet pickle relish

-1/2 of a red pepper (chopped)

-1/2 cucumber (chopped)
-1/2 cup of cherry tomatoes

  1. Cook the pasta according to the directions on the box.
  2. Mix all ingredients together.
  3. Refrigerate for 2 hours and serve chilled.
