Breakfast in 5 Minutes

I enjoy slaving away on the weekends perfecting my egg dishes.  There is nothing better than some eggs with steamed veggies. That being said, weekday mornings can be a bit rough. (Any mothers or fathers, you may want to stop reading this as I’m sure you would be envious of the morning I am about to describe.) Some mornings,  I somehow manage to squeeze in a 45 minute gym-session, post to Instagram, answer emails, blow-dry my hair, and make it to work for a 7:45 parent conference.

Skipping breakfast is not an option for me. I fear I would not function without it. Ever. I’m posting some quick and easy breakfast ideas that will have you out the door in 5 minutes or less.

Overnight(ish) Oats

I know, I know. Everyone is completely over “overnight oats”, but I’m not. My motto in life is often, “it ain’t broke, don’t fix it.” Plus, I feel like my recipe is a little bit different (better…special). In case you forget to put these in the fridge the night before, you can make them upon waking up. They will be soft enough in about an hour.

Nutbutter Banana Toast

I simply put one tablespoon (half a serving) of almond butter on a piece of toast. I add 1/2 of a sliced banana. It is important to find an all natural almond butter. One of my favorites is by Nuttzo. It is actually a 7 seed and nut butter with nothing else added. Pictured below is my new favorite bread. You can buy it at Whole Foods.

Hardboiled Eggs

The incredible, edible egg should never be overlooked- even during the week. Every Sunday, I hardboil a dozen eggs. 1 egg is less than 100 calories and 6 grams of protein. If you can overlook the horrific smell, they taste yummy and are a filling breakfast option.

Moral of the story- with a little planning, you’ll have time for a 5-minute breakfast that you can even inhale while driving to work in the morning. It also means you might have time for an early-morning selfie, too.

  1. Loved reading this post.
    Its the same in house too weekends are where we take longer at breakfast time and come up with a more elaborate meal.
    Weekdays are focused on coffee and granola.
